Carnitas Sliders from Gringo Grill and Cantina

TUCSON- Chef Scott Rackliff from Gringo Grill and Cantina shows us how to make Carnitas Sliders.

Here is what you need:

Carnitas Sliders
6oz of Carnitas
0.5oz of Jicama
0.25oz of Cilantro
0.25oz of Apple Chuttney
0.125 oz green Cabbage
1 oz of Pork Rub
0.5 Cider Vinegar
8 oz of Apple Juice
3 slider buns

Preparation Instructions
Step 1 Fine Julian cabbage, jimama, and cilantro
Step 2 Core apples and apply pork rub, grill dice apples
Step 3 Cook Apples in Apple juice until tender
Step 4 Combine jicama, cilantro, remaining rub, vinegar, cabbage, apples
Step 5 Heat carnitas, grill bun slightly
Step 6 Apply carnitas on Bun and Slaw
