Craig Nassar, "The Practical Chef," appears regularly on News 4 at 4, cooking up something delicious for "Let's Make a Meal." He says:
I'm a Culinary Institute of America graduate and Certified Executive Chef. I worked in New York City before moving to Arizona 18 years ago. While in New York I have cooked and worked with such celebrities as Donald Trump, Muhammad Ali, Jackie Onassis, Francine Lefrak, John Gotti, and others.
Over the years I was turning down jobs so I could concentrate on my full-time job. One evening, I had an epiphany: I wanted to continue to cook professionally, but on my own terms. My wife Cindy and I sat down and decided it was time for me to leave corporate America and do what I love to do best, "cooking". I resigned and entered into the world of a Personal Chef.
The idea of the Practical Chef came to me over the years cooking in friends and families kitchens and not my own. What I realized is that most people have in their very own kitchens the pots, pans and tools they need to create a fine meal and they don't even know it. Along with that I wanted to show folks that food doesn't have to be fancy to be fantastic. Although I'm happy to teach those "fancy" dishes as well!
That's where I come in. I come go to my client's homes and teach them various cooking techniques in their own kitchens with the tools and equipment they already have.
Lots of times you see cooking shows that teach you how to prepare a dish and they use all this top of the line equipment you may or may not have. Most of the time if you don't have those pots pans or equipment; you do have something in your own kitchen that works without spending extra money.
As well as the private lessons, I also do in-home dinner parties, from two people to as many people as your home will have. Anniversary parties, special occasions, weddings, Valentine's Day, showers, birthdays, etc. I come into your home, set up, cook the meal in your kitchen, serve the event, and clean up afterword. This gives you, the host, the time to spend with your guests rather than cooking and cleaning all evening. Many of my regular clients love this service and use it often.
I also do group cooking lessons, team building events, and consulting. All of which have been very successful in past events!
All my menus are customized to meet my client's needs. I work around all budgets and make your event one that your guest will remember for a long time to come.
Besides teaching clients how to prepare delicious foods out of your own kitchen I can help you organize your workspace, teach you knife skills and many other services.
Since starting full time into the business I have also catered events from 4 people to 200 people.
