Creamed potatoes from Skybox restaurant

Creamed Potatoes:
4 pounds Yukon Golds
3 cups heavy cream
1 tsp salt
1 tbls minced garlic
1/2 tsp ground white pepper
Dice potatoes into 3/8 cubes and place into 4 quart sauce pot. Add spices, garlic and cover with cream.
Bring to a boil then reduce heat to low and allow to thicken. Approximately 25 minute cook time.
