Edamame Salsa from Tanque Verde Guest Ranch

Edamame Salsa

1cup quality local honey
1/8 cup olive oil
Juice from 1 lime
1 ½ garlic cloves chopped
½ tsp. salt
Combine all in stainless steel bowl and whisk
Let sit over night

3 cups cooked edamame
2 cups roasted corn
1 cucumber diced
¼ cup chopped cilantro
1 cup red onion diced
1 cup crumbled Cotija cheese

Combine all ingredients and dressing prior to serving. Best if served with fresh tortilla chips... enjoy
