Farm Salad:
Spring mix (finely chopped, portioned 1 oz) 1 ea
Cooked Red Quinoa 1/3 cup
Garbanzo Beans (cleaned and husked) 1/3 cup
Red Radish (1/4" dice) 1/4 cup
Carrots (peeled, 1/4" dice) 1/4 cup
Cucumber (peeled, seeded, 1/4" dice) 1/4 cup
Tomatoes (1/4" dice, seeded) 1/4 cup
Green Cabbage (1/4" dice, portioned 1 oz) 2 ea
Avocado (1/2" dice, approx 3 oz.) 1/2 avocado
Feta Cheese (crumbled) 1/4 cup
Chives (minced) 1 tsp
Champagne Vinaigrette 2 oz
Kosher Salt 2 pinch
Ground Black Pepper 2 pinch
Add ingredients together to create the Farm Salad.
Champagne Vinaigrette:
Champagne Vinegar 32 oz
Granulated Sugar 11 oz
Blended Oil 64 oz
Honey 7 oz
Dijon 7 oz
Kosher Salt 2.5 oz
Fresh Ground Pepper .5 tsp
Blend ingredients together.
