Gourmet Girls Gluten Free Chocolate Diablo Cake

Cake Dry Ingredients:

1 ½ c All purpose gluten free flour mix
¾ c unsweetened cocoa powder
1 ½ c sugar
1 ½ teaspoon Baking Soda
¾ teaspoon Baking Powder
¾ teaspoon Xanthan Gum

Cake Wet Ingredients:

2 Large Eggs
3 Tablespoons Canola Oil
1 tsp vanilla
¾ cup Warm Water
¾ cup milk with 1 tsp vinegar


Preheat oven to 350 degrees. Line two six inch round cake pans with paper liners. In
mixing bowl whisk together all dry ingredients. On low speed add all wet and beat until
smooth and combined.
Divide batter evenly between pans and bake until tester inserted in center is clean, about
20 minutes. Add more time if needed. Cool on wire rack for 10 minutes and turn out of

Orange Buttercream
¼ c Butter
¼ c Vegetable Shortening
16 oz Powdered Sugar
Cream as needed
1 ½ teaspoons orange extract
Cream butter and shortening together, add powdered sugar and a few Tablespoons of
cream to desired consistency. Add orange extract and beat until smooth and fluffy.
