TUCSON - Among the many inspections the Pima County Health Department conducts each week are at businesses that make food served throughout Southern Arizona.
Tortillas Don Chava

Received seven critical violations. Several employees were observed wiping their faces with towels they kept on their shoulders and then continuing to make tortillas, without first washing their hands. Another employee was seen talking on her cell phone while bagging tortillas. There were also a large amount of flies in the facility. The inspector noted that the cause may be due the building being "very hot" and that doors were left open. With more than five critical violations, Tortillas Don Chava was given a "Provisional" rating.
Super Carneceria El Herradero
5434 S 12th Ave.
Received seven critical violations. A large Butcher block table used to prepare raw meat was observed chipped and worn. Food shall only contact surfaces that are properly cleaned and sanitized. A five gallon container of calcium chloride was found in a walk-in cooler where food is stored. Knives, metal pans and other kitchen items had grease and food debris on them. With more than five critical violations, Super Carneceria El Herradero, was given a "Provisional" rating.
