Let's Make a Meal: Calabrian Shrimp with Orzo



2 quarts water
2 tsp salt
1 tsp oil

Boil water with salt and oil, add orzo cook about 5 minutes for al dente. Strain and cool immediately. Can be saved for up to 3 days.

Calabrian Chiles
1 cup calabrian chiles diced (you could use red serrano peppers)
1 cup jalapenos diced
1 tsp oil

Heat oil in a saute pan and add both chiles. Let cook stirring occasionally for 5 minutes

8 raw shrimp peeled and deveined
1 tbsp pancetta (substitute bacon)
2 tbsp butter
1 tsp garlic
1 tsp fresh oregano
1 tsp calabrian chile mix
1/4 cup white wine
4 ea cherry tomato cut in half
Salt and Pepper to taste

Add 1 tbsp butter, garlic and pancetta heat for about 2 minutes.
Add raw shrimp and cook for 3-4 minutes or until shrimp is half cooked.
Add white wine and cherry tomatoes, let wine reduce by half and add remaining 1 tbsp butter, calabrian chiles and oregano.
Once butter is melted and combined remove from heat and serve over bed of orzo.

1 tsp butter
1 tsp garlic
1 tsp shallot
1 cup orzo

Add all ingredients to a hot saute pan once garlic browns, add orzo, and toss together. Enjoy!
