TUCSON - Today on "Let's Make a Meal" on News 4 Tucson at 4 p.m., David Matias from Teresa's Mosaic Cafe stopped by to make:
1 1/2 cups of fresh corn masa or prepared corn masa
1/4 tsp baking powder
2 tbsp minced scallions (green onion)
3 tbsp of Monterey cheese
vegetable oil for frying
1/2 cup enchilada sauce of choice
1/4 cup shredded lettuce
2 tbsp diced tomatoes
3 tbsp queso fresco
To make patties:
In a small bowl combine masa, scallions, cheese and baking powder and shape into a palm-size, round patties. Pan fry over medium high heat on each side for 2-3 minutes or until masa is cooked throughout.
While hot, smother with salsa verde or enchilada sauce and sprinkle with cheese of choice. Garnish with lettuce and tomatoes.
Variation: may also be topped with shredded chicken or ground beef.
