Let's Make a Meal: Jalapeno Cucumber Margarita

TUCSON - In today's Let's Make a Meal, Chef Donny Oploski from Monterey Court Cafe mixed up two drinks to enjoy for your weekend; a Jalapeno Cucumber Margarita and 'The Second Floor'.

Here are the recipes, enjoy!

Jalapeno Cucumber Margarita

Jalapeno Cucumber Tequila
1 bottle of tequila
3 jalapeno's seeded
skin of 1 cucumber
combine all ingredients and allow to sit for 1 week for flavor to infuse
pepper syrup
1 cup of sugar
1.5 cup water
1 cup of large chili flakes,
simmer until syrup is thick and red in color, strain chili flakes and allow to cool.
keep refrigerated
sour mix
1.5 cups fresh lime juice
1 cup lemon juice
2 cups water
1 cup of sugar + a little more
mix together, until sugar is dissolved and taste sour, but sweet, may need to add more sugar until it meets your taste buds
Rimming mix
equal parts
cinnamon, kosher salt, natural sugar (large granules)

for the drink
served in a pint glass
Fill the glass with ice

1.5 oz of infused tequila
.5 oz triple sec
.2 oz of chili syrup ( or more if you like it spicy)
top with sour mix and 1/2 of a lime squeezed, shake drink to chill and mix. Rim the glass with the cinnamon salt and sugar mix, and pour drink back into glass, garnish with a lime wedge.

The Second Floor

1.5 oz of hanger 1 blueberry vodka
2 fresh basil leaves
1 lemon wedge
.5 oz of raspberry puree
soda water
muddle together lemon and basil, add, ice, then the remaining ingredients except soda water. shake vigorously and then top with soda water, garnish with lemon and fresh raspberry
