Let's Make a Meal: Jerk Chicken


2 boneless leg quarters of chicken
1/2 cup of vinegar
4 teaspoons of brown sugar
2 teaspoons of molasses
1 bunch scallion
1 white onion- chopped or diced
1 teaspoon Thyme
1 habanero pepper
1/2 teaspoon all spice

Mix all together with Vinegar in blender.

Dry rub:

All purpose seasoning
1 teaspoon Paprika
1 teaspoon salt
2 teaspoons walkers wood (Jamaican seasoning)
1 teaspoon meat seasoning

Take chicken, wash with lime and dry with towel or kitchen towel. Then add half a cup of marinade onto chicken Add dry rub onto chicken, rub seasoning into chicken for for five minutes and place in fridge for 24 hours Place on grill for ten minutes each side then plate Then add rice and peas for side dishes with a coleslaw veggie.
