TUCSON - Today on "Let's Make a Meal," Chef Justin Andrews from Latitude Catering stopped by to make:
2 trout fillets, skinned
3 cups masa, seasoned with salt and pepper
2 T olive oil
1/2 cup tequila
1/2 cup white wine
3 T butter
2 T chopped cilantro
1 T fresh lime juice
1/2 cup diced tomatoes
1 t garlic
salt and pepper
preheat medium skillet on stovetop to med-high heat and add olive oil.
dust trout fillets with the seasoned masa and shake off excess.
carefully place trout fillets in hot pan and cook for 2-3 minutes until slightly browned.
flip fish and continue cooking for an additional 1-2 minutes. remove from pan and place on plate/
for the sauce, in the same hot pan add garlic and tomato and sauté for 1 minute.
add tequila, wine and lime juice and reduce by half.
lower heat to low and swirl in butter and fresh cilantro.
season with salt and pepper and pour over fish. enjoy!
