TUCSON - In today's Let's Make a Meal, Chef Jesse Bright from Soho Social House Kitchen & Pub made a tasty and easy pasta dish you can make for your family!
Here's the recipe:
Soho Penne Pasta
4 - Chicken Meatballs - cooked and keep warm
8oz - Penne Pasta - cooked
2oz - Crimini Mushrooms - sliced
3oz - Marinated Artichoke Hearts - quartered
2oz - Grape Tomatoes - halved
4oz - Baby Spinach leaves
2oz - Pecorino Romano Cheese - shredded
2oz - Butter
1oz - Garlic & Shallots - minced together
2 Tablespoons - Basil Pesto
2 Tablespoons - Heavy Cream
2 Tablespoons - White Wine
Salt and Pepper to taste
Saute garlic/shallot mixture in a little olive oil for 1 minute on med/hi heat, add mushrooms and cook for 1 more minute, then add artichokes continue cooking for a minute more. Deglaze with white wine, then mixed in the pesto and cream, bring to a boil and add tomatoes, spinach, cooked pasta and chicken meatballs. Finish with butter, cheese, salt and pepper to taste.
Garnish with more cheese and basil leaves.
