Let's Make a Meal: Stuffed Portabella Mushrooms


6 Large Portabellas (de-stemmed)
2 lbs of spinach
¼ cup of pine Nuts
¼ cup of Parmesan Cheese (shredded)
¼ cup of onions
1 tbs garlic
½ cup Gruyere cheese (shredded)
Dash of salt and pepper

1- Cook onions in a large frying pan till soft- about 5 minutes
2- Slowly add spinach until it is all wilted and cooked down
3- Remove spinach and onions to a large mixing bowl
4- Add all remaining ingredients except mushrooms and gruyere and mix well- add salt and pepper to taste
5- Stuff filling into mushrooms and sprinkle with gruyere
6- Bake at 350 for about 35 minutes depending on size of mushrooms
