Let's Make a Meal: Teresa's Caldo de Queso

TUCSON - Today on Let's Make a Meal, David Matias from Teresa's Mosaic Cafe stopped by to make:

Teresa's Caldo de Queso

3 lg russet potatoes, peeled and medium diced
1/4 cup onion, small diced
1/4 cup tomatoes, small diced
1/2 cup roasted green aneheim chiles, small diced
1 tbsp garlic, minced
2 tbsp tomato sauce
3 cups monterey cheese, small cubed
1/4 cup cilantro, roughly chopped
1/2 gallon of water or a good chicken stock
Kosher Salt, fresh cracked pepper, and Mexican oregano, to taste

In a medium size pot, heat 3 tablespoons of oil and add onions over medium heat. Cook until translucent then add garlic until aroma is apparent. Add potatoes and season with salt, pepper and Mexican oregano. Continue to stir and sauté for about 3-4 minutes. Then add tomatoes, roasted chiles, tomato sauce and water and allow to come to aboil. Reduce heat to simmer and allow to cook for about 25-30 min or until potatoes are fork tender. Add cheese and cilantro and serve HOT.
