TUCSON - Today on News 4 Cooks at Noon, Eddie Coronado, Executive Chef at Blanco Tacos + Tequila, stopped by to make fish tacos. Here's the recipe:
Fish Marinade Recipe
¼ cup Cilantro chopped
¼ cup Green onion chopped
1 Tbl Garlic chopped
1 Tbl Lime Zest
1 cup Canola oil
Place all ingredients in a blender and pulse until all is all is chopped fine.
Marinate 2oz pieces of Mahi Mahi for at least 1 hour.
1. Season fish on both sides and grill to medium and allow to rest.
2. For corn tortilla dip tortilla in water and grill till warm (about 1 min each side)and just starting to brown slightly. For flour grill till warm and starting to brown just slightly.
3. Top each tortilla with the following ingredients grilled fish, sour cream, cabbage, avocado, pico and cotija cheese.
