News 4 Cooks: Pulled Pork and Slaw Sliders

TUCSON - Today on News 4 Cooks at Noon, Chef Reese Shirley from Latitude Catering stopped by to make Pulled Pork and Slaw Sliders. Here are all the recipes you'll need to make your own at home:

Pulled Prok and Slaw Sliders

barbecue rub
1 cup brown sugar
1 T chili powder
1 T garlic powder
1 T cumin
1 T black pepper
1 T crushed red pepper
1 T salt
mix all ingredients together and store in
an air tight container.

pulled pork
1 each pork shoulder
1 cup barbecue rub (see above)
mesquite charcoal
wood chips
rub pork shoulder with rub. mesquite smoke
for 6-8 hours until internal temperature reaches
185-190 degrees. when cool, shred by hand or
pull apart with forks. will serve up to 10 people.

chipotle mop and sop sauce
1/2 cup pureed chipotle peppers in adbobo
2 cups ketchup
1 cup vinegar
1/2 cup sugar
1 T cracked black pepper
bring ketchup, vinegar and sugar to a boil. remove
from heat and add pureed chipotle peppers and
crushed black pepper. serve at room temperature.

slaw dressing
2 cups mayonnaise
3 T lime juice
2 T sugar
1 T olive oil
1 t crushed red pepper
mix well and chill.

sonoran slaw
1 head shredded cabbage
1 each red onion, sliced thin
1 each jicama, julienned
1 cup radishes, sliced
2 each roasted red peppers, sliced thin
2 each avocado, sliced
2 each tomatoes, julienned
2 cups roasted corn
1 bunch cilantro, minced
1 cup cojita cheese
roasted pepitos (optional)
slaw dressing (see above)
mix all ingredients together and chill.
