Salmon cakes from Dakota Cafe

TUCSON - On Wednessday chef August Ench from Dakota Café located in Trail Dust Town stopped by to make Salmon cakes.

Here is what you need:

Salmon Cakes
1 # chopped salmon
1 Tbl chopped parsley
1 Tbl Dijon mustard
4 oz regular mayonnaise
2 eggs
1 cup Bread crumb
1 Tbl salt
¼ tsp black pepper
1 tsp worchershire sauce
1 Tbl garlic minced
½ cup shallots minced
Sautee garlic and shallot till translucent and cool
Combine all ingredients
Patty into 3 oz portions
And dust with panko
Sautee each side 3-4 minutes

Garnish with parsley and serve with your favorite tarter, cocktail sauce or just fresh lemon
