SoHo mussels from Social House
1 pound fresh mussels -cleaned
1 oz garlic - chopped
1 oz shallots - minced
4 oz grape tomatoes - halved
4 oz chorizo - cooked and drained
2 oz fresh basil - thinly sliced
2oz butter - small cubes
1 Tbls extra virgen olive oil
1 cup white wine
1 cup roasted red pepper puree
salt and pepper to taste
serve with grilled bread
Saute shallots and garlic in olive oil for 1 minute, then add chorizo cook for another minute. add mussels, wine, red pepper puree and cover , letting mussels steam till they all pop open then add tomatoes, basil and butter. season with salt and pepper and serve right away with grilled bread.
