TUCSON - Today on News 4 at 4, "The Practical Chef," Craig Nassar, stopped by for our "Let's Make a Meal," segment. Today, he showed how to make Grilled Salmon in Lime Sauce. Here's the recipe:
Grilled Salmon in Lime Sauce
1 1/3 cups Lime Juice - fresh squeezed
1/4 cup Canola Oil
1 tsp. Lime Zest
1/2 tsp. Cayenne Pepper
1 each Avocado - diced
4 each Salmon Fillets - 6 ounce each
1 each Tomato - diced
1 each Green Bell Pepper - diced
2 each Green Onions - sliced
1/4 bunch Cilantro - chopped
In a small bowl, combine the first 4 ingredients. Pour 1/2 the marinade into a large resealable plastic bag; add the salmon. Seal bag and turn to coat. Add the tomato, avocado, bell pepper, and green onions to remaining marinade; refrigerate fish and veggies for 30 minutes.
Drain and discard marinade from fish and veggies. Place each salmon fillet and about 1/3 cup of veggies on a double thick piece of aluminum foil (about 18 inches, square). Fold the foil around the salmon veggie mixture tightly.
Grill, over medium heat for 15 to 20 minutes or until fish flakes with a fork. Open carefully to allow steam to escape and serve with lime wedges and cilantro.
